Kale Caesar salad (V)
Serves 1
Ingredients:
Handful of Kale (washed, tough stalks removed)
1/2 Avocado (cubed)
1 Slice of Wholemeal Bread
Drizzle of Olive Oil
Pinch of Sea Salt, pepper (to taste)
Salad Dressing:
3 TBSP Milk
1 TBSP Grated Parmesan Cheese
1 tsp Olive Oil
1/4 tsp Garlic Granules
1 tsp Tahini
1/4 Lemon (juice)
1/2 tsp Apple Cider Vinegar
Pinch of salt, pepper
Optional toppings: Sunflower seeds, pumpkin seeds, fried egg, shredded chicken, extra grated Parmesan.
Method:
Preheat the oven/grill to 250°C (or highest temperature).
Remove edges of the bread and cut into small cubes, drizzle olive oil on a baking tray and mix the croutons. Season with salt and pepper, grill/bake for about 3 minutes till crispy (tossing halfway). Set aside
Meanwhile, massage kale thoroughly using your hands with some olive oil until it’s tender. Place on baking tray, season and bake for about 2 minutes.
Blend/mix the dressing ingredients.
Mix the crispy kale with the sauce and top with the rest of the ingredients.
