overnight cinammon chia pudding
Serves 1-2
Ingredients:
3 tbsp chia seeds
100-150ml Plant-based milk (I like to use the Koko coconut milk for this cinammon version)
1 tsp ground cinammon (+ more for dusting on top)
1/2 tsp vanilla extract
1 tsp honey
Toppings: granola, cocoa nibs, berries, peanut butter, jam, yoghurt.
Method:
Mix the ingredients together well in a bowl or tupperware with a lid and leave to thicken in the fridge overnight.
In the morning, serve with toppings of choice and an extra dusting of cinammon.
